I don't think you need to carry the water.
What I do:
As soon as I am seated, I speak to the girl who welcomed me onboard and request her for a large bottle of water. If they don't have a large bottle, I ask for 3 minis. Then I take my time and finish it on the flight.
But this is very true, any alcohol on flight makes you completely dehydrated.
In any case, even on domestic flights, where alcohol is not an option, it is best to drink atleast half a litre of water on a 1 hour+ flight.
You feel fresh when you land, instead of drained.

And remember to use the toilet 20 minutes before scheduled landing, before the seat belt sign comes on. Later, there is a mad scramble for the toilets.
