Getting a chinese visa inspite of you having a hongkong return ticket is not a problem. This is the most convenient and cheapest way to travel there. Almost everybody who's visiting the fair next month should follow the same route.

Things to be seen in HK: City, itself. Shopping best done at the airport duty free, very nice. Ocean park, Symphony of Light's at Harbor, Abeerdden Fishing village can be given a miss so is the sampan ride, Victoria Peak cable car ride one way, Repulse Bay beach, Madame Tussauds at Vic peak, Don't forget Disneyland, if possible stay at Holly wood hotel there for a night, lovely, in Disneyland, don't miss Flights of Fantasy parade, Tinkerbell castle illumnation and Disney in the Stars fireworks. Avenue of Stars can be visited at night for a view of the city scape at night.
Macau: by ferry. Kumlam statue, A-Ma Temple (not great), Macau tower(must, worlds tallest regular bungee jump), Stay at Venetian Macau (must) very luxurious, takes one day to tour the hotel itself, Zaia show at the Venetian (Cirque du Soleil: Circus of the Sun show is spectacular). Gambling if you please. Ruins of St.Pauls church. Senador square with Jorge Alvares statue.
Shenzhen: in Mainland China: for shopping, all the Chinese duplicates emanate from here, don't buy electronics but buy clothing, footwear. Nothing much here, Return to HK and board flight, but emigration from Shenzhen to Hk is a pain and very taxing. Windows of the World in Shenzhen is a worthwhile place to see.
Haven't been to Beijing and Shanghai.

HK: 3 days of which 1 day for HK Disneyland. Macau & Shenzhen a day each.

hi well at present there massive floods in thailand you can see cnn or times of india for details
also i would advice you to travel anytime after feb to china
because 26 jan is chinese new year so there is holiday for normally 20 days in china also please take china visa from india because this visa is not granted in hongkong if your passport doest have previous chinese visa
