Dire Straits and Road to Hell are definites on my list.
The rest really depends on my mood, time of day, where I'm driving (city/highway).

Don't know if anyone's mentioned On the Road Again by Willie Nelson. That's one song that really peps me up when going on a long journey.

My all time favorite is "Ek Raasta Hai Zindagi" from Kaala Patthar. I often hum this to myself when riding the Bullet. Other one which I like very much is Gulzar's "Raah pe rahte hain, yaadon pe basar karte hain".

Most of the time now a days, in Safari, I have to give in to my four year old's wish and listen to her Shahrukh uncle's numbers while she watches them. I can't count how many times I would have heard the same songs of Billu or Rab ne banana di back to back
