What would be better, buying Toyota's version or going with the original Maruti? After sales service of Toyota is definitely leagues ahead of Maruti, but how would this deal between Maruti and Toyota fare in the long term?
For someone who keeps his cars for minimum 8 years, what would happen to service and spares if the partnership fails?

Toyota offers a longer standard warranty & extended warranty package.
To be honest it'll boil down to pricing, better service network (maruti has a wider network), etc. for many buyers who will realise the cars are effectively the same when taking a test drive.

That being said the mechanicals and the like are near identical if not identical, so if partnership fails and in the rare event Toyota cannot organize parts - just head over to the nearest MASS.

Anyday I will buy urban cruiser. So many Brezzas on road and definitely UC will be a bit different to look on road, on RVM for others. As such Japanese petrols are trouble free and this MS petrol engine is no exception. Yearly one day service is what is required as regular servicing. Head to Toyota showroom and get an urban cruiser eyes closed if you're confused between VB and UC.

The naming of the variants got me - Mid, High, Premium.
Truly minimum effort & maximum result. Remember - if you can't beat them, join them.

That wouldn't be a worry. Most parts will be interchangeable with Maruti parts and you can get your FNG to work on the car.

Considering the Vitara Brezza is one of the better built Maruti cars(non nexa) I feel this will bring more customers to Toyota dealerships and perhaps help distribute the load (dealerships and service centers)

However I doubt if this will result in more sales !! We already have high competition in the segment and Kia Sonet will definitely be looking at sales figures like its elder sibling. Overall, Toyota will gain from this.

I feel there would be some fixed numbers of UC which MSIL would provide to Toyota on monthly basis & surely not as much as Toyota want's or market demands .
so the sales volume targets for T will be surely met

Does anything change from a build/engineering perspective? I mean, except for the Toyota badge and reputation, does the car have any differentiators from the Maruti version?

Yes, brown upholstery!

These cars are made at MSIL plants afaik. The Glanza had zero mechanical changes from the Baleno, only cosmetic. At least this time they changed not just the grill but also the front bumper. That's the extent of it I'm afraid.
