I was going to suggest Tata Plantations in Coorg (they also have in Chikmagalur (=younger daughter's village).

Fantastic Raj era bungalows, beautiful coffee estates, great food. For a nature lover and photographer like you, it should be ideal. Ahh, to get up at sunrise, step on the cool grass of the lawn outside your room, watch the sunrise as you hear various birds chirping and singing!
