Perfectly possible. Valparai and Munanr are kind of similar. Munnar is more popular though. But nothing like Valparai esp the Athirapally-Valparai drive.

I guess what you meant is -
Day 6: Ooty - Coonoor - Valparai (Halt)
Day 7: Valparai -Athirapally- Munnar

While in Annur - Pollachi - Valparai route be on lookout for mopeds which run all across the roads.
You can also visit Aliyar dam which is enroute to Valparai just after Pollachi (http://en.wikipedia.org/wiki/Aliyar_Reservoir) .
Sholayar dam is enroute to Athirapally from Valparai, so you can cover it on Day 7: Valparai -(Sholayar)-Athirapally- Munnar . It is just beside the road and will take a max of 15 mins to cover this place.
Also, roads in between Valparai - Athirapally was not in best of conditions when I travelled in November. Iam not sure what condition it will be after rains, however it will take more than 4 hours for you to cover Valparai- Athirapally with breaks.
Try avoiding an early morning (before 6AM) start from Valparai since the route is frequented by elephants . Also Kerala Forest department takes a count of plastic bottles and bags while entering Kerala. The slip containing the the count should be displayed at the second checkpost near Athirapally to avoid a fine.
Also there are no hotels in between Valparai - Athirapally so do carry food and water.
