As far as I remember, we have been using mustard oil for most of the things. About 30 years back, vanaspati ghee was marketed and used by us also. But we stopped using it after the so called refined oils came into picture, earliest one I recall being Postman. Dad underwent Cardiac Bypass surgery in 1995 and his Cardiologist as well as Surgeon advised him only mustard oil. We still used refined for ourselves for puris and parathas except for him. But since last 6 months, we have entirely switched over to mustard oil and home made ghee. And with this change, we have noticed a drastic reduction in our digestive system issues. All the while, we have used mustard oil and now everything is mustard oil made. Sweets and halwa etc are made in ghee, no refined at all.

You can also try getting cold pressed oils from a reliable source if you want to maintain some variety. A farmer would eat whichever oil they had available according to season. I am gonna be evaluating small cold press machines which are consumer grade in the near future for personal use.

Does anyone here use the conventional palm oil based cooking fats? I saw a few drums of this stuff outside a Dhaba- imported from some SE Asian country perhaps. But is this healthy? I was under the impression that dhabas use sunflower and groundnut oil. I've read a lot of reports about the bad effects of palm oil on the environment due to the deforestation activities performed by farmers to clear the land.

The deforestation and driving animals to extinction in the SE Asia are reasons enough to stay away from Palm oil. This is the cheapest (or among the cheapest) cooking oils hence popular with Dhabas (and most if not all Fast food chains). It is the highest yield plant based oil, hence produced in high volumes, thus keeping the cost low which in turn drives up the demand. It also helps that it has a high-ish smoke point and does not deteriorate very rapidly when heated and can be used for several cycles of frying food. (Fries!).
It is definitely not the healthiest oil on the market but it isn't necessarily unhealthy. Even the healthiest oil consumed in copious amounts will be harmful.

Cold pressed mustard oil is what I swear by; made peace with the smell a long time ago !

Stay healthy my friend!
