How does the bike feel to ride with just one pannier (even half empty). It looks as if it could create an imbalance or feel unstable to ride or handle.

No issues reported. I am assuming the pannier and luggage combined weight to be 10-12 kgs max. At regular speeds, it may not impact handling much. However, at track etc, you'll definitely feel the difference while switching directions.

On my GS, with panniers / top box, the bike tends to understeer and becomes heavy in corners if pushed a little hard.
