how to check the engine oil condition.

hi all...

can anyone tell me how to determine whether my engine oil needs a change or not. I am not talking about level of engine oil by dip stick, after a fixed interval or indication on instrument panel. I want to know how we check condition of engine oil physically. I have seen mechanics take out dip stick and checking the stickyness of oil with fingers. what we should see when we are checking oil this way.
