Queries on Paint Job

Hello Friends,

I have the following queries on the Paint job for my Esteem when going for a different color,
I suggested my mechanic to strip the car completely and then paint the body, they say they normally dont do the complete strip...so i'm quite confused to decide on a paintjob now... Please suggest....

> Is it good to strip the car completely with all engine, accessories and then go for the paint.
> How do we remove the old paint, do we need a heat procedure or sand it?
