What exactly are the ECU Sport/Off options?

Is it a variation of the factory XDS and Throttle Controller via the VCDS ports?

Or is it something more interesting that I should know about!

Additionally, I have a Manual car at my disposal, and I have a few plans like importing an RTMG Air to Air Intercooler (RTMG-901-0099) , with the substantial tools required to remove the Water-Cooled Intercooler, which is deep pushed in towards the Intake Manifold, properly, without breaking anything, in hopes of increasing top end power.

(Side Note : Only thing preventing me from doing it this very moment is the very fact that no parts distributor has gotten the parts to India for selling, so, the complicated process of importing is now the sole option left here.)
(Also the warranty and the fact that no one has done it in India yet. )

Even on the ECU swapped-tuned cars, the common trend, I cannot help but notice that the torque falls face-flat after about 4600 RPM!
I would've suspected general valve float, but the fact that the factory cars can rev to a bit over 6500 RPM no problem reduces the probabilities of that!

Any technical perspective regarding this will be greatly appreciated!

ESC Sport will loosen the ESC intervention and turn ASR off. It also removes the torque limits so you can launch hard and in curves take off even if there is some ESC intervention going on. Hence its quite fun in curvy roads where it will allow some amount of sliding and does not cut power also. In traffic the initial acceleration limits are no longer there in D1 and D2. So in all, it will allow some wheel spins and hard cornering while still being ready if something goes wrong. Attaching some info for reference:
