What would be the best route from Panjim to Pune?

Read somewhere that Panjim-Kankavli – Rajapur – Chiplun – Mahad – Mangaon-Tamhini is better and easier over Anuskura ghat-Karad-Satara route

Not in my mind. Lanja to Sangameshwar is completely broken. Sangameshwar to Sawarde is two laned concrete. Mangaon bypass is nowhere to be ready and under construction so passing through Mangaon town easily adds another 15-20 mins to the commute based on the time of the day.

Karad to Satara 6 lane is in progress but average 50kmph can be maintained safely. In my mind Anuskura and then NH48 is still the way to go.

Based on my recent trip, I agree. Anuskura ghat is the recommended route.
