You can get Kashmir Chilly powder ob Amazon, Grofers and other sites.

If you are confused then Degi Mirch is a mixture of Kashmir Chilly (colour) and Normal Chilly for heat.

Re: Recipes / Discussions on cooking from Team-BHP Master Chefs

Has anyone here tried buying Black Wheat (which is definitely better in providing micro-nutrients)?
https://justagriculture.in/files/new...%20Farming.pdf

When I was living in Pune, I used to easily get it in the Dorabjee stores, but sourcing the same in Mumbai is proving to be difficult task. I have called up a few wholesellers (listed on IndiaMart), but they are not too keen on selling retail quantities (like 5 kg, 10 kg).

So back to my question:
1) Any one here tried Black wheat? (Taste wise it is same as regular)
2) Mumbaikars, any grocery chain that houses cutting edge food stuff?

My wife orders flour, grains, pulses etc. in 1kg/5kg/10kg packs from this e-seller in Pune. You could check with him, if he ships Black Wheat to Mumbai.

What is a good substitute for hand grated coconuts to be used in South Indian recipes? Is it better to use the dry desiccated coconut or is it better to used coconut chopped into pieces & ground in a mixie?

Fresh coconut pieces ground in a mixer grinder will any day be better than the desiccated one. You can coarsely grind the pieces in a mixer to have the consistency of coconut grated by hand. If possible, you can also remove the dark outer skin from the coconut pieces before coarsely grinding them.

Fresh coconut has a different taste and texture compared to a dry one. Most probably it is the water content in the fresh one.

Use a peeler to get rid of the outer brown skin. Chop into small pieces and then use a mixer to get a finer texture. One hack that works is to drop the pieces one by one through the hole in the lid (if you have one) and you will get the same texture as a hand grated one.

None, we really miss Nesto and Lulu, for the convenience they offered, get the coconut and give it in the window, they will grate it for you Free, and pack it in plastic pack, you can tell them only to grate the white portions.

Even pineapples, they skin it, remove the core, slice and pack, so fresh and juicy.

Our good old Riyadh days.

NCR BHPians

Any authentic source of Mathania chilies nearby in Noida/Delhi. Amazon offers a option but looking at reviews, I am having second thoughts.

Any feedback.

Is Indian corn (butta) no longer available? My grocers stock only American Corn which is a little sweet. He said the old corn is no longer available?

Re: Recipes / Discussions on cooking from Team-BHP Master Chefs

Can Kadipata powder be used as a substitute in recipes which require Kadipata leaves. I pick out & throw away all the leaves before eating any dish which has the leaves. I was wondering if using powder is an alternative?

Exactly my problem too. One option is to buy from the road side sellers who cook the corn over coal. They usually use the Indian ones.

Nutritionally, it may be the same. But I guess, it may not provide the same flavor. I would suggest chopping up the curry leaves and using them. This would make it impossible for you to pick and discard them.

If you powder it, it could be a lot more bitter. Tear it up and use it as suggested above. Thevaroma when you tear the curry leaves is heavenly!
