I would opt for a mirrorless camera only for size and portability. Medium format has different uses, is too expensive, and bulky.
My ancient D7100 is still doing ok re impromptu landscapes, as I found out during a recent trip to the Terai forests. All shot with the basic 18-105 kit lens. It was kept on the seat since I was using another body and lens for wildlife, and only picked up occasionally. But a smaller form factor would have helped, especially in a safari vehicle. Or when walking around.
So, a small mirrorless with at least a DX sized sensor, and as good image quality as the best crop sensor bodies in the market. Decent AF, need not be really good. Ability to shoot 14 bit RAW. A good wide angle zoom. And good ergonomics with a lot of manual control (no deep diving into menus to change simple settings) - e.g. one should be able to focus on point A, meter (lock exposure) for point B, and then recompose in an instant. I can do it very easily on my Nikons (using AF-ON for focus lock + shutter button for exposure lock), is it that simple on the mirrorless cameras?
Sunrise over the grassland.
Gateway to light
Misty sunrise 2. Different metering and white balance on this shot, compared to the first one. Light changed a little too, in a few seconds.

Edit: these are downsized from other JPEG files, not the original RAW or TIFF, so excuse the JPEG compression artefacts.
