The first thing I would check is if thee is sufficient refrigerant in the system. Quick pressure measurements will tell you.

You might be able to find some error codes with an OBD reader as well

When it's working, it's cooling is absolutely top notch so I guess the refrigerant levels must be fine but still will go ahead with the suggested diagnosis

Your car is pretty old, take it to a trusted AC mechanic and let him service the entire AC system, could be a choked condenser filter pipe line etc, and please don't play with the AC switch like you do, will do more harm than good.

I had the same issue with my Dzire when it was relatively new. The compressor would not come on randomly on some cold starts or if it did, it would sometimes not come back on after cutting off. Like you, the only solution was to mash the AC button until it worked and when it was working, it would cool normally.

There are two possible culprits : the AC compressor clutch magnets and the AC switch itself.

It might be possible to test the AC switch. Do this by turning on the AC as normal and if it isn't working press and hold the switch ain fully and see if the compressor starts working. If it does, then it is the switch. If not then it's likely the compressor clutch.
Note : This isn't 100% guaranteed to work and might only be possible if it is a "switch" and not a "button". No harm in testing it out though and something to consider if the clutch is fine or the problem persists after clutch replacement.

In my case, the clutch itself was bad and was replaced but the problem would still occur once in a while. Mashing the switch to get the AC to work had caused an issue and it was fully resolved by replacing the AC panel as well
