Agreed. And being an Indian, I look at it as disrespect towards food.
^^ No other way for them to generate the required output of porottas, in the required time/space constraints.
I dont find what is funny about this; it is common sight in almost every "thattukada" all over KL. (our word for "dhaba").

Actually i won't look at it as disrespect towards food. If you observe, their co-ordination is fantastic, not a single piece is dropped to the floor or being wasted. The catcher dude is expertly getting hold of them and passing them on to the next guy for frying.

Wow. To tell the truth, I had never seen this kind of action/co-ordination here. In fact in Pune it is not common at all !!
Came accross this wonderfull forum, its called tpbazaar.com, this is a funny forum, there are people who are selling used trousers for 1k :D, well this is a all techie forum and i dont know any techie who will buy used cloths.
Here is an example, a new asianet settop box comes for 200 in an offer. but see the rate quoted below.
There are many such interesting stuff there.

I was wondering why he beats the plate just before he throws, then I realized its the audio-signal input for the receiving guy. Amazing. And me too don't see this as disrespect to food. Such coordination you can see the way they make tea in the south -
Take a look
YouTube - The making of the famous five feet Kerala's tea

I think it's to balance himself. He throws the two hands in opposite directions at the same time. Else he will have to shift his body every time he throws it. I don't think the receiver needs a signal.
similar to Rajini who slaps his two hands together to throw his cigarette up in his mouth. Try it yourself, it makes it really effortless.
EDIT: both are done subconsciously.
