Are you referring to glucose intolerant or gluten intolerant? Because hell of a lot of North Indians (& South Indians) are glucose intolerant. Basically most pre-diabetics & diabetics have glucose intolerance. The reason why someone may have cauliflower instead of wheat is just not gluten intolerance but also to have a moderate or low carb-diet.

Turned out to be awful. Even I didn't eat it.

Can you please share the recipe for a traditional pizza? Vegetarian has to be it as save for me and my daughter, all are vegetarians and no one will aid me if it involves non-veg and I will have to do it all alone.

Sorry for the goof up I meant Gluten intolerance. It has now become a fashion to take very little carbs to arrest life style disease.

Low carb can help in case you do not compensate the quantities with non carbs. If you want to feel full and eat a lot, the result is same, carbs or no carbs.

Some of my friends have started Atkins diet to reduce weight and the first thing that the Doctor said is that though you can have meat, protein, fats and no carbs, but in no case indulge yourself and go beyond the recommended daily calorie intake. One large Pork chop is fine, but two or three with eggs and sausages is a recipe for disaster.

Masala Buns

During the 80's, when i used to visit my in-laws at Indiranagar, Adyar, Chennai; one of my favourite pastimes was visiting the Iyengar Bakery on Lattice Bridge road. I would go at around 1600 hrs, just when hot masala buns - made with chillies, onion and cilantro - were being removed from the oven. I used to buy a dozen, along with some pastries and my FIL and i used to sit in companionable silence munching these goodies, over some hot filter kapi.

Alas, my FIL expired during the early 90's and so did the bakery. I have tried the masala buns at various other Iyengar bakeries, but none of them even come close to the amazing taste of the one in Indiranagar.

I baked some today, and while they are not still perfectly in sync with that of The Iyengar Bakery; it is close, quite close.

LOL. You are just like me. When i see a video or a photo of a dish, i get hungry all of a sudden.

Ingredients:
- 3 cups maida (you can use wheat flour too)
- 2 onions finely chopped
- chilles, coarsely ground
- coriander, coarsely chopped
- chilli flakes for garnish:
Method:
  1. Prepare the yeast, but use milk+water.
  2. Mix flour, salt, some sugar, 2-3 tbl spoon oil (use preferably an oil without a distinctive odour), and the yeast preparation. Add milk as required to make a soft dough.
  3. Knead for about 10 minutes.
  4. Leave aside for raising for 1 hr, after covering with thin wet cloth.

  6. After the dough has risen, add sautéed onions, coriander to the dough. Do not knead as before, but try and mix it slowly. Add salt as required for final product.
  7. Leave aside for raising for 30 minutes.
  8. Line a tray or grease it. Make small balls of the dough and place it inside the tray. Cover with thin wet cloth and leave for 30 minutes.
  9. Pre heat oven to 200 C. Before putting the tray inside, brush the top of the buns with milk+chilli flakes mixture.
  10. Bake for 15 minutes approx.
  11. Remove and brush with melted butter immediately and allow to cool.
  12. Enjoy.

Marinate the breasts with salt, turmeric, red chilies.

Add a bit of oil. Coat both sides and leave for at least two hours.

Put the breast in cold pan ( I use a cast iron one, but a non stick will do) and start the heat, high for 2 minutes and low for 5 minutes.

Monitor the sides. As the chicken meat gets cooked it will turn white. Once the white has crossed half way up, flip the breasts.

NOTE
. No extra oil is needed as there is some in the marinade.
. Do not disturb the chicken while it is cooking. Once done the breast will no longer stick and come out easily.
. If you want uniform thickness, then pound the breasts at the thick end to flatten them.

Those look yummy. Thanks for the recipe. Now with Corona scare avoid eating outside also gets into our rule book. Today I was talking to my wife on what variety of snacks we could make, what raw material we need to stock from local grocery so that we can avoid eating outside, then here comes this "kaara bun" (as fondly called in TN) recipe. Baking is a good entertainment for kids to get engaged as it involves dry, wet mixing methods. So kaara bun will be done this week.

Thank you. Are Amchur powder & anardana powder available in regular grocery stores? Also when they say toasted garam masala, can one of the packaged garam masala powder be used?

Many grocery stores should carry one or both but in more expensive brands if you're not in north India. Toasted garam masala means just dry roast it a bit.

Dry roast something like Everest or MDH Garam Masala or dry roast actual garam masala ingredients?
