Ideally dash cams should be small and discreet. If size and discretion is not a factor, here are a few suggestions-

The best option for a dual channel system - Lukas LK-7950 - 1080p Sony IMX322 sensors for the front and back. GPS, WiFi, OBD support, Android and iOS apps available, plus a load of other features not available in most dash cams. Little expensive but will cover both front and back in one package. The rear camera records at 24fps 1080p and a lower bitrate hence the video quality for the back is not as good as the front camera which records at 1080p 30fps. It also has parking mode that works. Doesn't have a battery, it's capacitor based.
The Sony IMX322 sensor though being a 2MP sensor, performs better in low light due to the larger pixel size available in comparison to say a 4MP OV4689 sensor.
Capacitor based dash cams are safer they do not use lipo batteries, which can go bad, puff up and even explode or lead to fire. Plus the capacitor based cams can also work at higher temperatures and be left in the car without any worries.

1) Street guardian SG9665GC -On first glance this looks exactly like the much cheaper A118C & A119 but the internals are different. This also sports the Sony IMX322 sensor and a metal mount for the lens. Amongst the best when it comes to video quality at night. Capacitor based too. Reliable camera and excellent after sales support.

2) A119 - This model has just been released by the original manufacturer of the A118C series. Uses an upgraded chipset than the A118C along with the OV4689 sensor. Going by the reliability of the A118 series, there shouldn't be a problem on the hardware front.
They are also planning to come out with the A119s that'll have the IMX322 sensor but it is still in development.

3) Ausdom A261 - Again the same 4MP OV4689 sensor with the Ambarella A7 chipset but better video quality day or night than the Mini series.

5) Mini 0805 - The most reliable of the mini series but still not reliable enough. Has good video quality during the day and acceptable quality at night. OV4689 sensor + battery based.
There are newer models of the Mini available but the 0805 has been reported to be the most reliable of the lot.
There's one (Mini 0807) with the IMX322 sensor + capacitor but is still a disaster due to out of focus issues amongst other problems.

I have had one Mini 0805 die due to a faulty power source, the replacement started acting up after connecting it to a HDMI port but after sitting in the cupboard for a month or so it has magically sprung back to normal life.
Since then I've mounted it back in the car and is working without any issues. I still think they are not reliable and if it acts up again, it's going in the bin.
For the back
1) Either of the ones you choose for the front can be used at the back too. Just get 2 pieces. Preferably one with the Sony sensor for the back.
2) Mobius 1 - Small and discreet camera without a screen or any bells and whistles. Solid reliability and performance. Also used as an action cam. Works well for rear installs due to various mounting options and is its size. Good video quality during the day and night.

GitUp Git2 - This one has good night-time quality for a 16MP Sony sensor.
Does 1080p 60fps but drop to 30fps under low light conditions.

For night-time you need to keep in mind that no dash cam will capture what can't be seen due to poor lighting, especially for the rear.
Do also keep in mind how you want to mount it, is a suction cup preferable over a taped mount or vice versa.
Also do check your options on multiple websites and also check out reviews + user videos that include day and night footage before you decide.
