The Desire comes with 2.2 Froyo nowadays though it is listed as 2.1 Eclair in some sites.

For rooted users, ROMs having 2.3.4 version of Gingerbread is readily available for the Desire.

I guess you can simply sync contacts from phone to Google account. Any new addition you can chose where you want to create the contact.

Mine is on the way from US. We are a closed user group who will be using it on Reliance CDMA. 2 Phones of my friends (Nasik and Delhi) reached today and activated on Reliance. Okay, again I'm not able to answer on how to move the contacts which are already on your phone through exchange. But this is what I did when I moved to android from Nokia.

Using Nokia PC Sync exported the contacts to a csv file.
Imported the contacts to my google account
In the phone, Contacts->Menu->Add account, I added the google id and it synced the contacts from mail to the phone contacts. I also labelled the contacts at the time of import into google account. Hence I can selectively display those contacts.

In your case if you still have the E71, you can try the same approach.
Else you can do a csv export from outlook contacts and then follow the subsequent steps.
